Spent part of today trying to figure out different approach to finding a couple of Sous Chefs that work in mainstream casual restaurants. I have a very good client in Times Square that needs 2, but its not exactly a market that you can cold call. Most restaurants that I would target are too busy and I would be a bother, or they are just simply too large to track down the right chef.
I wonder how many chefs in the NYC area are members here?
