A number of years ago while serving as the General Manager of the new SpringHill Suites by Marriott in Fairbanks, Alaska, we struggled to interest concept restaurants in opening in the new hotel. We were the first truly custom SpringHill with space for a full service restaurant. No concept restaurants would look at Fairbanks. Then out of the community appeared Cafe de Paris Catering Company. Kathy Lavelle and her husband Frank Eagle agreed to consider opening a restaurant in the hotel. Frank's vision of a fine dining wine oriented establishment along with Kathy's culinary and wine expertise created Lavelle's Bistro. Over the past 7 years, the restaurant has grown into the Interior's finest dining establishment with the largest commerical wine cellar in the State of Alaska. Annual gross revenues have now exceeded $3 million. The true test of the success is in the return guest base. The Washington Post recently wrote an article about the quality of this establishment in the far north of Alaska. Numerous programs have been put into place for wine education and each year we are honored by Wine Spectator awards. I no longer work as a Hotel Manager, but have joined Lavelle's. Now here's a job that's fun!
